Hector & Rufus Cookies
instructions and decorating
1. Cookie Dough
Make your favorite sugar cookie recipe and chill dough overnight.
I used a Swedish Pepparkaka recipe (found online) for the Rufus cookies. Very tasty!
2. Roll & Cut Out
Roll out the chilled dough to about 1/8 inches thick. If you don’t happen to have a fox/cat head cookie cutter, use a round glass to cut out a circle for Hector’s head. Also cut out two small triangles for his ears using a knife. Attach his ears to his head (use a tiny bit of water as glue if the dough doesn’t seem to stick). Place assembled cookies on an un-greased baking sheet.
For Rufus, use a gingerbread man cookie cutter for his body and a thimble for his ears (cut out two). Use water to attach his ears.

3. Bake & Cool
Preheat the oven (check temperature in recipe). Bake for 6-8 minutes or until firm to touch.
Place baked cookies on cooling rack. They must be completely cool before decorating.
4. Make Icing
For Hector make two batches of icing, one orange and one white.
Orange:
juice from 1-2 grated carrots (just squeeze juice into a bowl)
or food coloring (yellow + red = orange)
zest from 1 orange (the zest is the orange peel, finely grated)
confectioner’s sugar
White:
water
confectioner's sugar
Please note: your icing should be thick and pasty so you can spread it, but not runny.
For Rufus make three batches of icing, one white (shirt), one brown (pants), and one light blue (vest).

cocoa
Brown:
water
confectioner's sugar
tiny drop of blue food coloring
Please note: your icing should be thick and pasty so you can spread it, but not runny.
5. Decorate
HECTOR: Use a knife for spreading. Starting with the white icing, create two half circles for Hector’s cheeks. Next, use the orange icing to spread over the rest of the cookie. Add mini chocolate chip eyes and nose white icing is wet. Dab white icing on each ear. Set aside to dry.
RUFUS: Do basically the same thing as for the Hector cookies. Attach his eyes and nose using the cocoa icing.
